Spinach and Panela Omelet
WHAT YOU NEED
- ¾ package (6 oz.) Cacique® Panela, sliced
- 6 eggs
- 2 handfuls of fresh spinach, chopped, and stems removed
- 6 mushrooms, quartered

HOW TO MAKE IT
- Make omelets by whisking 2 eggs together per serving. Add 2 whisked eggs to a pan over medium heat. Once egg has cooked on one side, add 1/3 of the mushrooms to one side, then 1/3 of the spinach, followed by 1/3 of the cheese. Fold over and cook for additional 3-4 minutes for cheese to melt. Spinach leaves will wilt a bit. Repeat the process 2 more times with remaining eggs, mushrooms, spinach, and cheese.
