Chipotle Shrimp with Rice
WHAT YOU NEED
- 1 cup Cacique® Crema Mexicana
- 1 package (10 oz.) Cacique® Queso Quesadilla, shredded
- 1 lb. shrimp, cooked, peeled and deveined
- ½ cup milk
- 1 (7 oz.) can chipotle chiles in adobo
- Cilantro, chopped (for garnish)
- Salt to taste
- Hot Cooked Rice, for serving
HOW TO MAKE IT
- Preheat oven to 375°F.
- Blend milk, Crema Mexicana and chipotle chilies.
- Layer cooked shrimp in baking dish then cover with cheese, chipotle and cream mixture. Bake 15-20 minutes until cheese begins to brown around edges. Serve over rice and sprinkle with cilantro.
