VAQUERO BREAKFAST TACOS
WHAT YOU NEED
- 1 12oz package of Cacique® Texas-Style Premium Pork Chorizo
- 1 tbsp olive oil
- 6 eggs, beaten or sunny side up if preferred
- ½ teaspoon Salt
- ¼ teaspoon Pepper
- ¼ teaspoon Onion Powder
- 4 taco size flour tortillas
- 4oz Cacique Ranchero brand Queso Fresco, crumbled, plus more for garnish
- 6 tbsp Cacique Crema Mexicana
- Fresh Cilantro (garnish)
HOW TO MAKE IT
- Heat the flattop grill over medium-high heat.
- Remove the chorizo from package onto the hot grill.
- Cook the chorizo, breaking down into smaller crumbles, until it's browned and crispy, about 5-7 minutes.
- In a bowl add eggs, salt, pepper, onion powder and whisk and add the flattop grill. Cook for a minute or so then mix with the cooked chorizo and push to one side of the grill.
- Heat up the tortillas and place the Chorizo mixture on half of each tortilla and top with Queso Fresco. Fold tacos in half and let them cook for a minute longer to crisp up.
- Serve tacos topped with crumbled Queso Fresco, Crema Mexicana & cilantro & enjoy!
